Melt-in-Your-Mouth Garlic Parmesan Chicken Meatloaf Or Meatballs

Ingredients You’ll Need  

NOTE: I used a combination of ground chicken and ground sirloin.

(Serves 4–6)

For the Meatloaf/Meatballs:

·                1 ½ lbs ground chicken 

·                1 cup breadcrumbs (or almond flour for gluten-free)

·                ½ cup grated Parmesan cheese

·                3 cloves garlic, minced

·                1 small onion, finely chopped

·                1 large egg

·                2 tablespoons olive oil (or melted butter for extra richness)

·                1 teaspoon dried oregano (or Italian seasoning)

·                1 teaspoon smoked paprika (optional, for depth)

·                Salt and black pepper, to taste

For the Glaze:

·                ¼ cup ketchup

·                1 tablespoon Worcestershire sauce

·                1 tablespoon honey (or maple syrup for a vegan option)

·                1 teaspoon garlic powder

Step-by-Step Instructions

  Preheat your oven to 375°F (190°C)

  Lightly grease a loaf pan or line a baking sheet with parchment paper for easy cleanup.

 Make the Meatloaf/Meatball Mixture

  In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, chopped onion, egg, olive oil, oregano, smoked paprika, salt, and black pepper.

  Mix gently with your hands until just combined—avoid overmixing to keep the meatloaf tender.

  Shape the Meatloaf/Meatballs

 Transfer the mixture to the prepared loaf pan or shape it into meatballs on the lined baking sheet.

 Smooth the top and sides with your hands or a spatula for an even shape.

Prepare the Glaze

  In a small bowl, whisk together the ketchup, Worcestershire sauce, honey, and garlic powder.

  Brush the glaze evenly over the top and sides of the meatloaf or meatballs.

Bake

  Bake in the preheated oven for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).

     Optional: Broil for 2–3 minutes at the end for extra caramelization on the glaze (watch closely to avoid burning).

 Rest and Serve

  Remove the meatloaf/meatballs from the oven and let rest for 10 minutes before slicing/serving. This helps retain its juices.

·                Use Fresh Ingredients: Fresh garlic and high-quality Parmesan make a noticeable difference in flavor.
